About
- All breads and pastries are made by hand by the shop's own pastry chefs.
- The doughs use no preservatives or fermentation accelerators and are naturally fermented with a house yeast.
- Sugar is kept low, with sweetness coming from mineral rich water and produce such as Ganghwa yellow sweet potato.
- Many breads are made with Gimpo golden rice, golden pumpkin, sweet potato and garlic from local farms.
- Coffee is sourced and roasted by 180 Coffee Roasters, home to two Korean roasting champions.
